Ingredients

1 Bunch Fresh Kale
2 Bell Peppers
1 Cup Cherry Tomatoes
1 Cup Cucumbers
¼ Cup Fresh Mint
¼ Cup Fresh Zaatar
¼ Cup Radish
½ Cup Pomegranate Seeds
1 Shallot
3 Slices Brown Sandwich Bread
1 Tbsp Dry Zaatar
1 Tbsp Sumac
1 Tbsp Olive Oil
For Dressing:
2 Tbsp Olive Oil
¼ Cup Vinegar or Lemon Juice
2 Tbsp Pomegranate Molasses
1 Tsp Sumac
1 Tsp Salt
 

Directions

INSTRUCTIONS

1. To prepare the croutons, cut the brown bread slices into cubes, sprinkle with dry zaatar, sumac and olive oil
2. Bake in an oven at 200 degrees until golden and crispy
3. Chop the kale and discard the stems. In a pot of boiling water, blanch the kale for 1 minute
4. Mix the chopped bell peppers, cucumbers, tomatoes, sliced radishes, pomegranate and kale
5. Prepare the dressing by mixing all the ingredients
6. Add the dressing to the salad and mix well
7. Add the croutons
8. Serve and enjoy
