Spicy Chicken Rice

Ingredients

INGREDIENTS:

· 7-8 spring onions
· 1 pound of boneless and skinless chicken breasts
· 2 garlic cloves
· 2 tablespoons of olive oil
· 2 fresh bay leaves
· 4 whole cardamom pods
· 1 teaspoon of coriander
· 1 tablespoon of chili flakes
· 1 tablespoon of cumin powder
· 1 red bell pepper
· 1 tablespoon of ground turmeric
· 300g of basmati rice
· 400g of parsnips, beetroots and potatoes
· 6 medium eggs
· 1 pomegranate

Directions

INSTRUCTIONS:

1. Heat oil in a pan and fry chicken pieces until cooked
2. Add chili flakes, cumin powder, turmeric powder, cardamom pods and bay leaves then stir for 3-4 minutes over medium heat
3. After stirring, add chopped red peppers then stir again
4. Add the spring onions and cook over low heat for 10 minutes until the spring onions are soft and sweet
5. Increase the heat and add the cooked rice then mix
6. Pour 800ml of cold water and put the pan into the oven for 25 minutes
